Ribolla Gialla Collio DOC
Produced with 100% RIBOLLA GIALLA grapes
The fermentation of the must is carried out by indigenous yeasts in steel tanks at a controlled temperature.
The wine is then aged partly in steel and partly in French oak tonneaux for ten months before bottling.
The scent is characterized by warm and enveloping notes, which blend well with aromas of ripe fruit, with buttery and vanilla nuances.
A straightforward, fresh wine of remarkable character.
Golden yellow color with brilliant highlights. At first, the aroma is characterized by delicate floral and fruity notes of apple and peach. Secondarily it is enriched by notable minerality and spicy notes of saffron and vanilla. On the palate important varietal and acidity notes of Ribolla stand out. It starts with a distinct feeling of freshness which combines with a light note of sourness typical of this varietal. It’s certainly a strong wine with great personality like this border-land.
To name a few: goes well with red prawns and chick pea puré, prosciutto crudo D’Osvaldo which is lightly smoked, aged “culatello”, fillet of cod with breaded eggplant, grilled eel and finally caciocavallo podolico cheese
